I've heard that initially, you have to boot from an SD card and then modify a boot order file to boot from an NVME drive. Is that true?
No, though I believe that by default a brand new 5 will try uSD boot first but will carry on trying the other boot options.

Booting a new Pi 5 from usb will not be a problem and changing the boot order is fairly simple.
Okay, but if there is no SD card and USB key will it try to boot on the NVME in PCIe?

Or when I receive my Raspberry PI 5 I should put the OS on the USB key then go to the config file to change the boot order and put my NVME with my OS ?
