Should work just fine. Important things to note:
* you will need to tell the Pi it is getting 5V@5A via "usb_max_current_enable=1" in config.txt or the USB ports will be current limited
* use a good quality buck converter and ensure it is not supplying more than 5.1V
* use an appropriately rated 5A USB power cable
* deal with how to cleanly power it on and off - just cutting the power without a clean software shutdown in a bad plan
* consider a read only file system
