there are many.
but i'd recommend looking for a load cell interface that outputs digital. (has A/D built in) maybe I2c interface
mostly because the signals are small (mV)
so, load cell interfaces are built just for that.
if you want to buy an A/D, look for one that has adjustable input gain (so you end up with a mV range)
differential inputs,
and a digital output (I2c)
take a close look at the SParkfun page.
OR Adafruit probably has something... and they have very good tutorials
