I've used the built in SD Card Copier to copy my two Pi 5 Bookworm installs onto NVMe drives and they went without a hitch both times (I did select the 'New Partition UUIDs' option to ensure I had no clashing UUID's if I left the original MicroSD card in by mistake), it's also got the added advantage of have a progress bar to see how far the copy's got.
