Whether or not you can sneakernet your files on a USB stick or SSD depends on what file system is set up on the removable device. RPiOS natively uses the Ext4 file system. Windows can't read or write to that without additional software.
As for transfer speed...first off, if you're on the same LAN, that is independent ISP speed. Pi4s and Pi5s can run at 1Gb/s...assuming any switches, routers, and cables are rated to handle that. So a 200GB would be 1600Gb and a transfer would, in theory, take 1600 seconds, or about 25 minutes. USB 3 is rated at 5Gb/s, so copying the same file would--again, in theory--take 320 seconds, or about 5.5 minutes. However, you will never achieve the theoretical maximum speed as there is overhead of various sorts involved.
(Please note that when designating things like file sizes and transfer speeds, lower case 'b' is bits, while upper case 'B' is bytes. Be careful how you specify what you're talking about.)
