It would help if you provided more detail on the actual signals you need to monitor. Typically, actual voltage levels and rate of change.

If these signals are simple DC voltages and within safe low voltages perhaps between 3.3 to 30 volts I would propose using simple Opto-Isolator devices to both electrically decouple your machines from the Pi circuits and reduce a wide ranging voltage to a simple "pull-to-ground" signal driving a spare GPIO. You would just need to carefully select the voltage dropper/current limiter resistor to reduce your signals to a level to avoid stressing the input LED but that's just Ohms law stuff and not forgetting voltage polarity.

As for which Pi to use I would suggest anything between a Pi Zero to a Pi4 but one with either WiFi or Ethernet connections. From the simple outline any Pi would be over-kill but given the costs why not. I've avoided the new Pi5 as its both total over-kill and folk here are still reporting issues getting the GPIO working using existing pre-Pi5 examples.

You should also consider how your solution propagates outputs results to other systems.
