Pi-Hole runs fine on a Zero. I used a cheap USB to Ethernet adapter* and plugged the Pi into the routers USB connector (normally used for a disk drive) on the back for power.

Ran 15+ home devices perfectly well and never pushed the Pi at all - after a week or so I turned logging turned off to cut down SD Card wear except when I needed it for trouble shooting. Took it off the network though as the family did not like how you had to add sites in that would not load due to ad blocking and went to individual control on each machine...

As for having multiple Pi computers and multiple SD Cards - no matter how you fight it, they sneak in at night while your back is turned (I think the sock fairy delivers them)

* Yes you can run DNS over Wi-Fi but Ethernet is more reliable and this was a 'real' zero.
