I'd use a spare Zero W to log the output. It doesn't take a huge amount of power. Being able to ssh in and read the logs would be advantageous.The first question is how ?Use the UART?
But that's not really going to be appropriate if I have to power up another PC just to record what the UART puts out when the Pi shuts down. This 'stuck in a shutdown loop' only happens once in a blue moon but it's annoying when it does happen.
Otherwise maybe a Pico W with a simple web page that shows the last n lines logged. Uses even less power.
