Sorry, I only just realised this post was related to PINN, and I see you have already posted on my sticky thread which I somehow missed.
PINN does work on the Pi5 (with some minor limitations).PINN does not (yet) support Recalbox on the Pi5. It does include Kali for the Pi5, so Kali should work directly through Rpi Imager as well, if you choose the correct version.
You have only mentioned getting Raspios working on your NVME (Is that on the PCI connector, or via some USB adaptor?)
Have you got Raspios working on your USB drive or SD card?
What is your BOOT_ORDER setting?
On the Pi5, most video configurations are now set in cmdline.txt rather than config.txt.
Make sure you are using the left most HDMI connector (when viewed from the rear, furthest from the USB ports).
Can you connect your Pi5 (running raspios) to your home network via ethernet cable? If you use raspi-config to enable SSH and VNC, can you access your Pi from another computer (e.g. PC using Putty)?
