I have a Pi Zero running Buster.
I suspect that's a huge part of your problem, a RasPI zero could barely run a GUI back when it was released in November 2015 on Jessie. I'm surprised you could put up with the GUI performance on Buster. The Pi Zero has got to be thrashing away at the swap very hard to even get booted up with a GUI.Further to this, I've got a new card and installed Bullseye 32 bit on it. Full GUI.
I recommend disconnecting everything else from the Zero and hooking up a monitor and keyboard for further troubleshooting. I'd also try using the LIte version of Bullseye or Bookworm instead of a GUI version.
