If you sort of cheat and put a proper/custom u-boot.bin as kernel on an SD-card it will work. But the bootROM in a BCM SoC does not support initializing some random USB-ethernet chip. Maybe in theory it works if the chip is SMSC (or the one used in Pis with RJ45 via USB), but I don't think so.Does a Zero 2 support network boot using the Ugreen Ethernet adapter?
Lowest cost board I know is about 25 Euros, has SPI-flash onboard where you can put your (self compiled) bootloader (e.g. U-boot).
I have also used a UGREEN adaptor with a RPi zero, it works, but never again (see: viewtopic.php?p=2274990&hilit=AX88179#p2274990). SPi ethernet also works, I have it soldered, but only 10Mbps half duplex and still you need an SD-card.
