Not sure exactly what I did that solved this, but started with doing these changes in the config.txt
and after a reboot, PipeWire was the default card in alsamixer, and when increasing the volume here it affected the volume on BT as well, so now I can set the default volume to more than 40% and have better dynamics with the remote control for the amplifier.
