The dearth of replies should give you a hint about how likely you are to find something here.
Obviously a Pi is a great choice for driving the display, but you might need a wider audience for better suggestions.
Good luck with your project! All you need is a small TV with video input, an RPI i.e. a Pi Zero which has composite out enabled and you're good to go.
