Without a datasheet it is impossible to give advice. Searching the net yields no good results.
Only source I found is in a user FAQ list and a page https://raw.githubusercontent.com/Seeed ... 950A-1.pdf

So measure resistance of this temp sensor and look if it matches this table. Looks as if it a NTC sensor.
Use a voltage divider and connect the temp sensor to an ADC input of pico. The size of additional resistor depends on the values of the NTC.

There are other companies producing these 'screw-type' temp sensors. If you are lucky, you find one with a DS18B20 build in. Only buy from a company where you get full documentation.
