So from my discussions with Yodeck, they have recommended a splitter. I would be fine with that solution, but the devices we need this on are outside and the first place we tested a splitter, the splitter died on the first hot day. Yodeck may end up eventually implementing use of the second port, but we're honestly less concerned about the licensing cost and more concerned about additional devices to monitor/points of failure. You are correct that the Yodecks run on older versions of Rasberry Pi OS. Their supported image is currently using Buster.
As to other solutions, I'm more than happy to look at other solutions, but they would need to be similarly user friendly on the management side as content is managed by a non technical team.
