I saw a demo video for a sound camera using a Pi and Matrix Creator hat and wanted to give it a go myself. I found one for sale and purchased it but I'm unable to do the install as directed on the GitHub for the device. I've tried the install on a RPI 3b with no luck at all. I know this is old tech but it seems pretty cool and I'd think someone would be using them out there.

I don't get past the first command: echo "deb http://packages.matrix.one/matrix-creator/ ./" | sudo tee --append /etc/apt/sources.list
It looks like matrix-creator-init couldn't be found but I'm super new to all this so I feel like it's me who've made a mistake. Does anyone know of a source for installing the Matrix Creator package?
The command you cite acts only within your own Raspberry Pi Operating System. It is not dependent on anything external.
However, looking ahead, I think what you are trying to install has long been abandoned by its developer.
The first line of the webpage holding the install.md file says: "This repository was archived by the owner on Aug 3, 2018. It is now read-only."
If you were able to update your apt package manager configuration as suggested your would subsequently find that there is no longer an apt repository online at the site packages.matrix.one - that site simply does not exist in the current directory of Internet sites. [DNS.] I think it is possible that the current owners of the matrix.one domain are not the people who created your HAT and published the code.
Matrix-labs, the owner of the GIthub repository you are trying to use, gives info@matrixlabs.ai as an email address. Perhaps you might get help there?

But again all routes lead back to non-existent sub-domains of matrix.one.
tl:dr: I think you may have purchased a circular paperweight.
