RPI-5 can play 1080p h264 and also h265 very easily and smoothly. The issues about "youtube" playback is because of the extra processing power required for the web browser shenanigans. If you download that youtube video and play it back in VLC for example, you'd see that it would play perfectly well.
If you are willing to compromise, i'd say switch to X11 (from wayland) and youtube playback will be a little bit better on Chromium. I am on a different desktop environment (KDE) and i can also turn off the screen compositor (which you can't do on default RPIOS desktop) and i can actually get 1080p 60fps youtube playback without many dropped frames. It is pretty smooth.
When it comes to Linux, you can't have your cake and eat it too. That is what i learned over the years. So you need to be willing to get your hands dirty. You need to enjoy to tinker with your toys![Smile :)]()
