How do i setup unattended-upgrades with automatic reboot and on-changes mail notifications to gmail account on a headless raspberry pi 5 server?

It's also very frustrating that there is no ncurses setup for this. Just to go through a step by step setup to fix everything.

Never heard of ncurses. Looks useful. You may want to ask on their forums though

To me, the bottlenecking part is the mail notifications to gmail. What program shall i be using? How do i set this up?

Personally, I use Python's SMTPLIB https://docs.python.org/3/library/smtplib.html and email.message https://docs.python.org/3/library/email.message.html

So please, is there anyone who can make a fully fledged tutorial from a-z on how to do this? a complete setup for the regular user.

This forum is not a place for asking for a tutorial to be written but one where tutorials are shared. Sounds like you are the best one to write one after some more research and trial and error testing. Raspberry PI is a very much DIY.
