You're very welcome. And goodness me, there's a lot of stuff on that Waveshare display dev board - especially for £14.40.

Regarding DVI, I think this is a very nice board https://www.solder.party/docs/rp2xxx-stamp-carrier-xl/ together with either the https://www.solder.party/docs/rp2350-stamp/, or the https://www.solder.party/docs/rp2350-stamp-xl/.

With Pimoroni's amusingly long https://shop.pimoroni.com/products/pimo ... ipo-2-xl-w you could maybe put your 8-bit RGB pins on the extended part of the board (GP31 - GP39 are nice and contiguous) leaving most, if not all of the regular-sized Pico pins free. And for DVI there are a number of options - I like this one https://shop.pimoroni.com/products/adaf ... i-displays.

Adafruit's https://shop.pimoroni.com/products/adaf ... 0-computer looks very nice, but maybe not flexible enough for your needs, and it's been out of stock for ages.

Hope at least some of that was useful.
