I have a bookworm/trixie compatible gcc 15.2.0 and clang 21.1.0 at https://github.com/swampdawg/qtc but beware it is a huge download (about 4Gb) and you'll need 20Gb of space to install it. It's actually a QT development environment, hence its size.
Compiling a newer gcc is relatively painless. Compiling clang is a pita.
If installing trixie from scratch works, that would be the way to proceed.
