Anyway I'm hoping for some pointers on where to begin.
Well, for a start, throw away Gemini. You don't have enough skill or experience to know if it is feeding you good information or nonsense.

Secondly, if the addition of a "titanium ground probe" made things worse... remove it and put things back as they were. And what do you mean "to clean up stray voltage" anyway?

Are you using the Amazon sensor or the DFRobot sensor? Either one will need the ADC module. Post your schematic. Post your code.
