Alright folks, I picked up an mini HDMI cord, a micro USB adapter, and a new micro USB cable for power delivery.
I believe the last image I flashed last night was Pi OS lite w/o any customizations. Plugged everything in and observed the following:
On all but a single one of my attempts, I observed the "rainbow screen" for about a second before the Pi shut down.
In my attempts to capture the rainbow screen on video, I kept plugging and unplugging power. In one instance, the green LED flickered and then stayed on. To my surprise, the screen showed some initial boot messages. It checked the root file system successfully but did not proceed any further, even after waiting for 5 minutes. I have not been able to replicate this.

Based on initial googling, I'm suspecting problems with the power supply. I tried a fourth phone charger, as well as a laptop charger + USB C-to-USB A adapter but did not have any further success.
I will continue researching and provide updates if I make progress but I wanted to share back initial findings.
