I found a solution to my problem by editing the /etc/systemd/login.conf file and changing HandlePowerKey=from "ignore" to "poweroff". Note the quotes are for clarification and are not part of the command. HandlePowerKey=poweroff
Now I have a single click power on and a SINGLE click power off.
