Documentation rarely gets updated. A GPIO I2C bus showing as i2c-3 is out of date, and has certainly never been true for a Pi5. Even on a Pi0-3 we've had a static i2c-10 for the camera/DSI display I2C for probably 5 years. Pi4 has always had the I2C for the HDMI interfaces as i2c-11 and i2c-12.

Dynamic I2C buses get assigned numbers above all static defines, so generally that will be above 10. "i2cdetect -l" will list all the i2c buses and the provider for them.

Have you assigned the touchscreen to the display device if you have any other displays connected? You can also check the coordinates of the touch events using libinput or evtest.
