Yes, I know what you were suggesting. It will work, but it won't look as tasteful as you think it will. Plus you have to be careful not to plug the USB end in first so that adapter lead is not "live" when you plug it in. The USB panel mounts you suggest are certinaly elegant, but they are quite large. I was thinking of something like this and making an adapter lead.
Is the Pico powered when you plug your cable in? Same problem.

Drill and file a hole for the type C socket very discreet. Push the socket through from the back until it is flush with the front. Space it from the back of the faceplate with some plastic shims or hot glue.
