If they show up as separate DRM or possibly fbdev devices, then Wayland or X11 should both be able to ignore them and leave them available for other uses.
You'll have to give a bit more information about which displays these are, and what dtoverlay lines you're adding, so we can advise on how they are likely to be configured.
Thank you for the help.
All of the screens "appear" to be Hosyond 3.5" 480x320 LCD screens and ALL of them are using the same DTOVerlay commands in the config.txt:
dtoverlay=piscreen,drm,rotate=180
max_framebuffers=2

If I comment these lines out and revert back to the default line of
#dtoverlay=vc4-kms-v3d
I can still RealVNC into the server and the resolution is 1280x1024 as set in the configurations.
Therefor the PIs and the LCDs are all working and working the same...

I will try and figure out how to do the fbdev commands and/or view DRMs and let you know what they state.

It appears, that using the LCDs as STAT Monitors is not a normal issue, so I will probably just figure out how to make the LCD stay as a separate secondary 480x320 screen and set RealVNC to a use the default HDMI port for utilizing the desktop.

As I stated, I am new to this and just trying to muddle through it. THANK YOU for all of the help.
